Eileen and Minerva are very engaged in living a healthy lifestyle! Eileen and Minerva have two very specific diets which makes it essential for staff to be diligent in the support they provide the ladies in food and drink choices.  Support staff encourage fruits, vegetables, low fat food choices and water to both ladies. It is important that staff monitor Eileen’s sugar intake on a consistent basis which they do by encouraging sugar-free food and drink items. Minerva is on a low calorie diet therefore staff ensure that foods high in calorie such as fried foods are avoided.

Eileen and Minerva have their own preferences when it to comes to exercise. Eileen enjoys walks around her neighborhood, malls and at parks while Minerva enjoys participating in range of motion exercises. The support staff at Claridge are great in ensuring that Eileen and Minerva are in the best possible health at all times!

Healthy Recipe

Ground Beef Gravy with Whole Wheat Pasta, Carrots, Broccoli and Cauliflower

Preparations:

Ground beef gravy

1 cup ground beef
1 small onion, diced
Salt and pepper to taste
1 tbsp. flour

Directions:

Brown the beef and onion in skillet until done.  Add salt, pepper and 1 cup water.  Cook 10 minutes.  Mix flour in with 1 tablespoon water and then mix into beef. Cook until thickened.  Serve over cooked pasta.

Pasta

Prepare pasta according to instructions on package box.   Boil a mix of Carrots, Broccoli and Cauliflower for a few minutes without overcooking and drain.

 

Enjoy beef gravy over pasta with mixed vegetables of carrots, broccoli and cauliflower on the side.  Serve alongside with a 16 ounce of ice cold water.
